The secret is time: our cookie dough is cold-rested (“soaked”) for at least 24 hours before baking. This slow rest allows the ingredients to fully hydrate and the flavors to develop, producing a cookie with better rise, improved texture, and a more caramelized, toasty finish—the kind of homemade chocolate chunk cookie that tastes like it came from a small-batch bakery.
